Y is for Yummy

Took off this morning and ended up getting coffee, hit the home improvement store, garden center,  and farmer's market. Starbucks was crazy. They were giving away samples of new coffee, cake pops, and mini samples of some new drinks. A crowd buzzed and circled around the place. It looked like a tour bus had dropped off fifty+ people. I'm still feeling the effects of my early morning airport run, the day before.  I ended up leaving the house at 1:45 am and getting home at 2:45am.  I have had jet lag, but this feels worse, to me.  Anyway, hubby seems happy to be home and there is a shift from tired to relaxed.
We stopped at the farmer's market, I gathred some of my favorites. Don't they look yummy!
I love shelling peas and eating them raw, do you?  Daughter and I ended up strawberry picking yesterday.  Everyone wanted Strawberry Shortcake, but I wanted a lighter version. I decided to make plain muffins and add a bit more sugar, some vanilla, and a 1/2 tsp nutmeg. My daughter decided she liked it better than the biscuit version.  The verdict is still out with everyone else.  Here is my Strawberry Muffin Shortcake.

Plain Muffin recipe:

2 cups all purpose flour
1 tbsp baking powder
2/3 c. sugar
1/2 tsp nutmeg

Combine in a medium sized bowl and set aside.  In large bowl you will mix your wet ingredients.

1 cup milk
1 egg
1/4 cup canola oil or your fav
1 tsp vanilla extract (yes, it will add to the flavor, don't be shy)
Whisk this together and now with a spoon stir in dry ingredients.  Don't over mix. I spray my muffin tins with spray oil and preheat my oven to 400 degrees. This recipe will make a dozen or more based on the size of your pan.  Bake for 15-18 muffins, till the tops are golden brown. I served ours warm from the oven with butter, berries and homemade whipped cream!  It is easier, than the mess I normally make with biscuits. Let's just say flour fingerprints on my clothes and globs of biscuit dough to clean up.  These are yummy and simple to make. The hardest part was picking the berries!  Hope your weekend is sweet, oh, I mean yummy!

Muffin mix sounds lower in calories. And I've never eaten raw peas.

It's always fun to get free samples. I wonder if they'd host an event like that at my local Starbucks.

Cynthia-I wondered what was going on! I have never seen so many samples?! I know there is a promo on May 4th, buy a certain drink get one free.

Alex-Yes, a lot lower! I never did till recently~ My family all did, but me. It isn't just you... :D

Your posts always make me hungry! I have the BEST recipe for light fluffy biscuits - my grandma's - the secret ingredient is cream of tartar - do you put that in yours? I LOVE strawberry shortcake with biscuits. I had forgotten about them. Must remedy that soon.

I have a old family biscuit recipe, no cream of tartar. I did lighten it with buttermilk, instead of more shortening. Family doesn t know ; )
My family recipe says when making shortcake biscuits add a little sugar. Strawberries With Angelfood cake is amazing,too. I couldn t resist, y had to be yummy. Yes quick you need a sweet cure!

mmmm yummy, we still don't have strawberries here, but they should appear at the green markets in a week or two or three :)
